ClangCL toolset seems to be broken with latest Visual Studio 2019 image

It seems like the latest (as of December 15th 2020) version of the Visual Studio 2019 image somehow broke support for the ClangCL toolset when using CMake with the Visual Studio generator.

There were no issues previously and indeed using the previous image works just like before, but with the current image, CMake is unable to find a working C++ compiler with the ClangCL toolset.

I have a very simple configuration for my project here:

I'm guessing it could be possible that the current image somehow doesn't have support for the Clang compiler in the Visual Studio installation, but I'm of course very willing to dig deeper into this and provide any information that might be relevant.
