Project then I see all of the other team members Git accounts,
which is itself a little weird IMO. In the Account Settings, it is
marked as being still linked to my GitHub account and I don't see
any way to remove/change that link.

button. Whoever authorized access to GitHub repos should revoke it
on GitHub. Otherwise, tell me your account name and I will reset it
from here. The main rule is one AppVeyor account could list repos
from a single GitHub account.

all GitHub repos that all team members have access to.

Does this mean that you can't have a personal and work AppVeyor
account?

account with user email and then add it to org account back as a
collaborator.
