Is it possible to set the Default branch to always
pull from default GitHub branch?

Nope, it's always taken from webhook request. What would be use case for that?

We has a project that we disable the webhook and schedule the build to run nightly. I think it builds the

Yes, scheduled builds always run default branch that is set on project settings in AppVeyor.
